Modan-Yaki
A popular variant of Okonomiyaki is modan-yaki, or Modern-yaki, a combination of noodles and okonomiyaki. Modan-yaki is when okonomiyaki has noodles included as a layer. The noodles used are either yakisoba or udon noodles, and are cooked inside the okonomiyaki, in addition to the cut up pieces of proteins and vegetables. The name is believed to come from either the English word modern
, or from the phrase mori dakusan, which means to pile on.
Apart from the noodles cooked inside the okonomiyaki, modan-yaki is very similar to the original, and is usually served with the same toppings: katsuo (dried bonito flakes), aonori (seaweed), and mayonnaise.
