Burikatsu-don is a famous local specialty in Sado of Niigata enjoyed by many year round. Buri is
yellow-tail in English and is a popular fish in Niigata. Katsu is a Japanese-style of deep frying using panko, flour, and egg to cover the protein in a delicious batter. Instead of topping off the katsu dish with Worcester-based sauce, Burikatsu uses soy-sauce as the main seasoning. While tonkatsu and tonkatsu rice bowls may be the most popular of the katsu dishes, burikatsu is a refreshing change of pace. The fish cutlet is prepared with local produce and is cooked to a crispy, flaky outside and a delectable, melt-in-your-mouth richness on the inside. The sauce compliments the fish perfectly over a delicious, steaming bowl of white rice.
