In Hiroshima, Okonomiyaki (Japanese style pancakes or pizza) has been a popular dish since before the World War. It is primarily made from flour, eggs, cabbage mixed and is cooked on a hot plate. Variations are made by adding meat, shrimp, and other ingredients. With Hiroshima style okonomiyaki, the batter is cooked into a thin crepe and the ingredients are cooked separately rather than mixed together. The cooked ingredients are then placed onto the crepe and served over yakisoba noodles, rather than served separately. The people of Hiroshima cook and eat the okonomiyaki using small spatulas on a griddle, adding just the right among of sauce, ingredients, and spices before enjoying the meal. Hiroshima may be famous for many landmarks and attractions, but when it comes to food, Hiroshima Okonimyaki is a must.
